Vanilla Cupcakes

Cupcake is a small cake designed to serve one person, it may be baked in a small thin aluminum cup or paper cup. Like the larger cakes, icing and other cake decorations, such as sprinkles, may be applied.

How to make Vanilla Cupcakes?

Ingredients:
for the cupcake
  • 4 eggs (whites and yolks separated)
  • 2/3 cup sugar
  • 1/4 cup water
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 1 cup flour, sifted
  • 1/4 cup unsalted butter, melted
  • 1/2 tsp orange or lemon extract
  • 1/2 tsp cream of tartar
  • 1/2 tsp vanilla
for the cupcake frosting
  • 2 cups icing sugar
  • 2 tbsp softened butter
  • 1/2 tsp vanilla extract
  • 2 tbsp fresh milk
  • drops of gel food colour (optional)
Procedure:
for the cupcake
  1. In a mixing bowl, combine the egg yolks, 1/4 cup sugar and water. Mix until smooth.
  2. Add-in baking powder, salt, flour, melted butter, orange or lemon, and vanilla, then set aside.
  3. In a separate bowl, combine egg whites and cream of tartar using an electric hand mixer, then beat at high speed.
  4. Gradually add the remaining sugar and continue mixing until stiff.
  5. Combine the two mixtures gently using a hand mixer or spatula. Don't over mix.
  6. Pour the mixture into the molds with cupcake liners, just 3/4 full.
  7. Preheat the oven for 175°C.
  8. Bake the cupcake for about 30-40 minutes, then let it cool.
for the cupcake frosting
  1. In a mixing bowl, combine the sugar, butter, milk, vanilla and gel food colour (optional). Beat on medium speed until smooth.

  • Get a cupcake, decide which design you want.
  • Spread over the cupcake or you can use icing bag /pastry bag to create a nice design.
